mini pecan pies (tea tassies)

5/10- i used stevia brown sugar and YOU COULD TELL and i forgot to grease the pan. next time i would try Magnolia recipe instead.
difficulty: 3/10 (if dough already made)

half a pie crust recipe/leftover pie dough (see apple jam pie post)
1/3 c dark corn syrup
1/4 c brown sugar
1.5 tbsp coconut oil melted
1 tbsp ground flax + 3 tbsp water (mixed prior)
1/2 tsp vanilla 
1/2 c chopped pecans

preheat oven to 350 and actually grease a 12 mini muffin sheet. roll out dough until 1/2 inch thick and use a 3 in rimmed glass/cookie cutter to cut circles and place in pan mini big each muffin hole. fill each hole with chopped pecans. refrigerate while making filling. literally just mix the other ingredients together. then fill each crust to the top. bake for 25 mins. let cool in pan for 10-15 mins, then remove and cool on wire rack.
